I hope I am doing it right, I am kind of uncertain about how to do the collar. If you have any suggestion please let me know.

The collar is too wide. Hanfu is cut in a way so that it wraps around your body, not slip on it.
If anything, for zhongyi the neck opening should be no larger than 4/5 of your neck diameter - the extended collar lapel will do the rest of the trick. Too much fabric will only make it droopy.
